'Dining Hall' Dahl

Serves 4

What you need

  • 2 tablespoons of oil
  • 1 large onion finely chopped
  • 3 teaspoons of garlic, minced
  • 3 teaspoons of ginger, minced
  • 2 cups of green lentils* or 2 cups of red lentils
  • 6 cups of vegetable stock
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder (optional)
  • 2 dried bay leaves
  • ½ tablespoon garam masala
  • 1 teaspoon ground turmeric
  • Salt to taste

*If using green lentils soak for at least 2 hours prior to cooking, if you haven’t pre-soaked, cook the lentils for 30 mins prior to making the dish.

Cooking instructions

Heat oil in a medium size pot and gently cook onions for 2 minutes, add ginger and garlic and cook for a further 2 minutes.

Add cumin, coriander, garam masala and chili if using. Stir for 1 minute. Then add lentils and stir for another 1 minute.

Add bay leaves and stock, bring to the boil, and then simmer covered for 15 minutes if using red lentils, or 30 minutes if using green lentils.

Remove from heat and check mixture. The red lentils should have a puree consistency, or simply taste the green lentils to see if they are cooked, if still firm continue to simmer until soft, add more stock or water if needed.

Once cooked add turmeric and salt and to taste.

Serve with basmati rice.

Also serve with yoghurt, fresh coriander, and freshly chopped chili if desired.
